Traditional Portuguese rice pudding

Traditional Portuguese rice pudding with white rice, milk, eggs, lemon, cinnamon and vanilla — an easy, healthy and quick homemade recipe for breakfast or dessert. Ideal for kids.

INGREDIENTS
200 g of rice, preferably arborio
400 ml of milk
200 g sugar
2 yolks
1 tbsp butter
grated zest of 1 lemon
half vanilla pod
a pinch of salt
ground cinnamon

STEP-BY-STEP COOKING RECIPE
Step 1
Boil 400 ml of water in a saucepan, salt and add rice. Simmer under a lid until cooked, 20 minutes.
Step 2
Boil milk with vanilla seeds in a stewpan. Lightly mix the yolks in a bowl, add 2-3 tbsp. hot milk and mix.
Step 3
When the rice is boiled, pour in the hot milk, add sugar, yolks, butter and lemon zest, mix. Continue cooking, stirring, for another 15–20 minutes, until the milk is completely absorbed in rice.
Step 4
Arrange the pudding in serving cups or bowls, sprinkle with cinnamon and cool completely. Put the pudding in the refrigerator for 1 hour.
