Strudel with cherries and cottage cheese

INGREDIENTS
200 g cherries
100 g icing sugar
400 g fat cottage cheese
80 g cream, 30% fat
1 large egg + 1 yolk
500 g puff pastry
3 tbsp. l. sweet crackers
ice cream for serving

STEP-BY-STEP COOKING RECIPE
Step 1
Remove the seeds from the cherries, sprinkle with half the icing sugar and stir.
Step 2
Mix cottage cheese with cream, egg and remaining powdered sugar, beat with an immersion blender until smooth.
Step 3
Roll out the dough into a rectangle 45×35 cm. Sprinkle one third (along the long edge) with breadcrumbs. Place the curd filling on the crackers. Sprinkle with cherries (keep the juice before serving).
Step 4
Gently roll the whole structure into a roll, place on a baking sheet covered with parchment with the seam down. Allow to distance 15–20 minutes, brush the dough with yolk.
Step 5
Preheat oven to 200 ° C. Place a baking sheet in the bottom third of the oven and bake until golden brown, about 35 minutes.
Step 6
Allow strudel to cool slightly before serving, 15–20 minutes. Serve warm with ice cream and cherry juice.
