INGREDIENTS
Pork tenderloin 500 g
Balsamic vinegar 3 tbsp
Dried ground ginger 0.50 tsp
Soy sauce 3 tbsp
Black pepper to taste
Rice 150 g
Tea 1 tbsp
Cherry twigs to taste

How to cook smoked pork tenderloin: recipe step by step
Step 1. Mix soy sauce, balsamic vinegar, ground ginger and black pepper. We collect part of the marinade into the syringe and inject it into the meat, making injections over the entire surface of the piece
Step 2. We send the meat to the remaining marinade, cover with a plate and put under oppression for 8-10 hours. Dry the meat on a paper napkin, then lightly fry it on all sides with heated vegetable oil
Step 3. Pour rice with a small amount of water: it should completely cover the rice. We give the rice to completely absorb the water. Then mix rice with tea leaves.
Step 4. Wrap the mixture in foil, leaving a small hole for smoke to exit. We spread the foil with rice in a cast-iron pan or any thick-walled dishes and put on an intense fire
Step 5. When the mixture heats up and smoke starts to emit, send the grate to the dishes, put the pork on it, cover the dishes with a lid, turn off the heat and smoke the meat for 60 minutes: 30 minutes on each side
