lemon zest — 2 tsp.

soft cottage cheese — 750 g
eggs — 3 pcs.
For lemon cream
lemon zest — 1 tsp.
sugar — 0.5 cup
egg — 1 pc.
lemon juice — 2 tbsp. l
butter — 50 g
For the basics
butter — 125 g
butter biscuits — 250 g

Step-by-step recipe preparation

Step 1
Chop the cookies in a blender into small chips. Add the butter warmed to room temperature and beat until smooth. Put the resulting mass on the bottom and sides of a detachable form with a diameter of 22 cm, compact it with your hands and refrigerate for 30 minutes.
Step 2
Beat the cheese with zest or sugar with a whisk or mixer. Continuing to beat, add eggs one by one.
Step 3
Put the form on a baking sheet, carefully pour the stuffing into it. Place in preheated to 160 ° C oven for 1 h. Allow to cool completely in the oven with the door open.
Step 4
Cook the cream. In a small bowl, mix the butter, sugar, lemon zest and juice. Beat the egg, mix.
Step 5
Put the bowl on the pan with low-boiling water and cook, stirring constantly, for 20 minutes. The finished cream should stick to the outside of the spoon. Remove from heat, cover and allow to cool to room temperature.
Step 6
Put cream on cheesecake and refrigerate for at least 3 hours.
