Lime tart with blueberries

Flour — 180 g
Corn starch — 20 g
Cold butter (cut into small cubes) —100 g
Icing sugar — 50 g
Eggs — 1 pc.
Salt — 1 pinch

Lime cream:
Eggs — 4 pcs.
Sugar — 150 g
Cream 33% — 200 g
Lime — 3 pcs.

Butter cream:
Custard — 350 g
Cream Cheese — 280 g
Lyme zest — 2–3 pcs.

Cream 33% — 250 ml
Sugar — 62 g
Vanilla — to taste
Yolk — 50 g
Corn starch — 22 g
Butter — 30 g

Eggs — 1 pc.
Liquid honey — 30 g
Sugar — 12 g
Flour — 25 g
Baking Powder 5 g
Dye — to taste
Chocolate elements to taste
Blueberries — to taste


Send flour and butter, starch, powdered sugar, salt to a large cold bowl, quickly grind. Beat the egg a little and send it into butter crumb, roll the dough into a layer on a floured table and put it in a baking dish. Make on the dough with a fork, send in the refrigerator for 4-5 hours or overnight.

  1. Prepare the cream: whisk the eggs with a whisk, combine with sugar, stir, pour in lime juice and cream, remove the zest from 2-3 limes and add to the same.

  3. For cream, mix yolks and sugar, starch. Separately heat the cream and vanilla, pour a thin stream into the yolks, stirring with a whisk, half the cream, and then pour the cream into the saucepan with the remaining cream and heat, stirring constantly, until the cream thickens. Remove from heat, mix with butter, cover with food film. Cool at room temperature, then refrigerate.
  4. Beat cream cheese into the air mass and mix with custard until smooth, add lime zest. Put it in a pastry bag and put it on tart balls.
  5. What to make moss, beat an egg, honey, sugar. Sift flour and baking powder to the liquid mass, beat with a mixer at low speed, add dye and beat again.
  6. Put the dough in plastic cups, cover with cling film and send in the microwave, cook for 1-2 minutes. Decorate with moss, chocolate and blueberries tart.
