Healthy vegetarian vegetable soup

Cooking time: 20 minutes

Ingredients:
celery stalk — 1 pc.
carrots — 1 pc.
Bulgarian pepper — 1 pc.
Tomato — 1 pc.
leek — 60 g
vegetable oil
tomato paste — 2 tbsp. l
5 pepper mix
olive oil — 80 ml
chabatta
garlic
salt

Cooking method:

  1. Cut the Bulgarian pepper, carrot, celery stalk and tomato into cubes, the white part of leeks — rings.
  2. Fry the carrots in a skillet with vegetable oil, then fry the Bulgarian pepper, celery and leek.
  3. Enter the tomato paste and fry well, add the tomato, heat everything together, pour in water, bring to a boil and boil for 10 minutes.
  4. Grind the soup with a blender, salt, pepper and pour in olive oil, whipping the soup with a blender.
  5. Prepare the croutons. Cut slices of chabatta, bake in a dry frying pan. Rub the croutons with a garlic clove and sprinkle with olive oil.
  6. Pour soup in a plate, decorate with olive oil and a mixture of peppers. Serve soup with croutons.
