INGREDIENTS
2 small beets
400 g pumpkin
2 medium carrots
1 small celery root
100 g arugula or root
juice of half a lemon
200 g not very salty feta cheese
salt, freshly ground black pepper
fried pumpkin seeds for serving
For refueling:
50 g cilantro or parsley
1 clove of garlic
1 cm fresh ginger root
juice of half a lemon
zest of 1 lemon
80 ml olive oil

STEP-BY-STEP COOKING RECIPE
Step 1
Preheat the oven to 200 ° C. Peel all the vegetables and cut into different pieces: oblong, semicircular, triangular. Cover the baking dish with parchment, pour the vegetables with lemon juice, salt, pepper, pour olive oil. Bake under the foil for 30 minutes, then without foil for another 5-10 minutes, until golden brown.
Step 2
For dressing, chop cilantro with peeled garlic and ginger. Fold in a blender, add lemon juice, salt, pepper and oil, whisk until smooth.
Step 3
Put the baked vegetables on plates, cool a little, add the root or arugula and mix. Put the feta cheese and dressing on top, sprinkle with seeds and serve.
