Green jelly cake with lime without baking — the idea of a bright birthday dessert for boys and girls. It looks aesthetically pleasing, cooking is simple. Adults will love it too!


Cookies — 200 g
Sour cream — 500 g
Butter — 100 g
Cottage cheese or cream cheese — 150 g
Sugar — 120 g
Gelatin — 10 g
Vanilla Sugar — 10 g
Lime or lemon — 1 pc.
Green Kiwi Jelly — 1 sachet
Mint — 1 sprig


  1. For the basics: in a combine or blender, grind cookies into crumbs. If there is no household appliances at hand, wrap the cookies in a bag and roll out with a rolling pin. Keep the butter warm in advance to make it soft. If you do not have time or forget to do this, flood the oil in the microwave or in a water bath.
  2. Pour cookie crumbs and butter into a bowl, mix well. Cover the bottom of a detachable shape with a diameter of 22 cm with parchment paper and lay out the resulting dough, evenly distributing and tamping. Put the dough in the refrigerator for 30 minutes.
  3. For the jelly part: pour gelatin with water (100 ml) and leave to swell for 10 minutes (or according to the manufacturer’s recommendation indicated on the package). Put the gelatin on a small fire and heat up to a maximum of 50 ° C — in no case should you boil! Do not forget to stir the liquid until the gelatin is completely dissolved. Cool.
  4. Pre-wipe the cottage cheese through a sieve so that it does not get a granular, but a smooth consistency, add sugar, sour cream and vanilla sugar. Cut 1/4 of the lime from two edges of the lime and squeeze the juice (you should get 2 tbsp. L.). The middle of the lime will come in handy for decoration.
  5. Beat everything until sugar is dissolved (in a deep bowl so that sour cream does not spray). Slowly pour gelatin into the whipped mass with a thin stream, continuing to whisk. Pour the cream into a mold onto a layer of cookies and put the cake in the refrigerator again for 1-2 hours.
  6. Prepare Kiwi jelly according to the instructions on the package, reducing the recommended amount of water by 100 ml. Allow the jelly to cool, remove the cake and pour the jelly on the frozen cottage cheese and sour cream layer. Put the finished cake in the refrigerator for another 4–5 hours, so that all layers are completely frozen.
  7. Before serving, remove the cake from the mold, garnish with curls of thinly sliced ​​circles of lime and put the leaves of mint.
