Baked spicy pork ham

soy sauce — 4 tablespoons
thyme — 1 small bunch
sage — 1 small bunch
Zira — a pinch
pickled onions — 20 pcs.
whole pork ham — 3 kg
garlic — 1 large head

marjoram — 1 tablespoon

brown sugar — 0.5 cups
black pepper (peas) — 2 tbsp.
laurel leaves — 5 pcs.
salt — 1 cup
allspice peas — 2 tbsp.
dry rosemary — 1 tablespoon

Step 1
For brine, boil 3 liters of water with salt, sugar, herbs and spices, allow to cool completely, pour into a large container, add another 4 liters of boiled water, mix. Cut the skin from the ham, leaving a layer of fat 1.5 cm thick.
Step 2
Place the ham in brine for 12 hours, then turn over and salt for another 12 hours (all this time keep it in the refrigerator).
Step 3
Make deep cuts in the ham and stuff it with pickled onions and garlic cloves. Pour the ham with soy sauce, wrap in several layers of foil and bake in the oven for 20 minutes. per 0.5 kg of meat plus 20 minutes. on the whole piece at 180 ° C.
Step 4
Then unfold the ham, drain the juice that has stood out into a saucepan and evaporate in half, adding thyme, sage and zira leaves. When serving, pour meat over the sauce.
